Roasted Zucchini, Carrots & Broccolini
Ingredients:
- 2 zucchinis, sliced into rounds 
- 2 large carrots, peeled and cut into sticks 
- 1 bunch broccolini, trimmed 
- 1 tbsp olive oil 
- Salt and pepper, to taste 
- 1 tbsp fresh thyme (optional) 
- 2 tbsp Meli Honey 
- 1 tsp lemon zest (optional) 
Instructions:
- Prepare the Vegetables: - Preheat your oven to 200°C (400°F). 
- Place the sliced zucchinis, carrot sticks, and broccolini on a baking sheet. Drizzle with olive oil and toss to coat. Season with salt, pepper, and fresh thyme (if using). 
 
- Roast the Vegetables: - Roast the vegetables in the preheated oven for about 20-25 minutes, or until tender and slightly caramelized. Halfway through cooking, toss the vegetables to ensure even roasting. 
 
- Make the Meli Honey Drizzle: - While the vegetables are roasting, warm the Meli Honey in a small saucepan over low heat for 1-2 minutes, making it easier to drizzle over the vegetables. 
 
- Serve: - Once the vegetables are roasted to perfection, remove them from the oven and transfer them to a serving platter. 
- Drizzle the warm Meli Honey over the roasted vegetables and sprinkle with lemon zest for an added citrusy touch (optional).
